Ginger Honey Muesli

This recipe is bought to you by one of our team members, long-time muesli maker and honey fan… Hannah. She is our brand designer and crafts our social media content, and has been using honey in place of refined sugar in her baking/cooking for many years.

The best thing about this muesli is that once you’ve made the base, you can mix in all kinds of delicious extras to really customise the muesli to your taste (or what ingredients you have on hand. Enjoy, and share a pic with us of what you make!

I N G R E D I E N T S :

(No measurements here! It’s all about how much you want to make, what ingredients you have and being creative with the flavours/textures you love in muesli. If you’re in NZ, Hannah recommends heading along to Good For Wholefoods Refillery with your containers/jars to find the most delicious ingredients and to reduce plastic waste.)

For the base:

  • Rolled oats (you can use a combination of jumbo oats and quick oats for texture). This is your base, so it should be the largest quantity in proportion to the rest of the ingredients.

  • SEEDS! (Hannah’s faves are: sunflower seeds, pumpkin seeds, chia seeds and sesame seeds). Don’t be shy, add lots.

  • Shredded Coconut

  • Nuts (Hannah is allergic to nuts, so this is a great recipe for anyone in the same boat, but if you love them, add your faves!)

  • Honey Love NZ - Ginger & Honey (a generous drizzle)

  • Coconut Oil (about 1/4 cup but if you’re making a big batch, go with 1/2 cup.

  • All spice or cinnamon powder (just a teaspoon)

Ideas for the extras:

  • Puffed buckwheat

  • Puffed brown rice

  • Puffed quinoa

  • Chopped dried dates/apricots

  • Raisins/cranberries

  • Cacao nibs

  • Dried goji berries

  • Freeze dried raspberries/stawberries

  • Coconut Smiles from Ceres Organics (or something similar)

M E T H O D :

  1. Preheat oven to 1600°C. Line an oven tray with baking paper.

  2. In a large bowl, combine all of the base ingredients. The coconut oil and Ginger Honey should coat the dry ingredients to make them a bit sticky (but not so much that they are drenched). You may need to add more coconut oil and/or honey depending on the dry ingredient quantities.

  3. Pour onto the baking tray and spread out as much as possible. If you like quite a sweet muesli, now is a good time to drizzle on more honey but don’t mix it in, leave it to form clumps as it bakes.

  4. Bake for about 20 mins, checking every 5-7mins to give it a mix around so that it gets evenly toasted. Meanwhile, prep the delicious extras (such as chopping dried fruit).

  5. Remove muesli from the oven and allow to cool. Transfer back to the large bowl and now get creative and add as many or as little extras as you want. Again, the quantities are up to you. Stir to combine and you’re done, ready to enjoy in the morning!
